Jalapeno Poppers - Chorizo
Ingredients
6 large whole fresh jalapenos
½ pound chorizo
2 cups cheese (Colby or cheddar is best)
Directions

Cut each jalapeno in half lengthwise and remove seeds.

Place peppers on a cookie sheet lined with parchment paper.

Fry chorizo and remove from heat.

Fill each jalapeno with chorizo.

Top each jalapeno with cheese (OK to overflow a bit).

Broil for 1-2 minutes (just until cheese browns).
