Jalapeno Poppers - Chorizo

Ingredients

  • 6 large whole fresh jalapenos
  • ½ pound chorizo
  • 2 cups cheese (Colby or cheddar is best)
  • Directions

    1. Cut each jalapeno in half lengthwise and remove seeds.
    2. Place peppers on a cookie sheet lined with parchment paper.
    3. Fry chorizo and remove from heat.
    4. Fill each jalapeno with chorizo.
    5. Top each jalapeno with cheese (OK to overflow a bit).
    6. Broil for 1-2 minutes (just until cheese browns).
    7. Serve.
